Chef Cory Hoekstra
As an executive chef with Bottleneck Management, Cory Hoekstra will guide the culinary team in the opening of City Works Eatery and Pour House at Disney Springs. In conjunction with Corporate Executive Chef Paul Katz, Chef Hoekstra designs his menus with brilliant twists to classic American dishes sourcing seasonal ingredients.
Specializing in culinary development, menu design and allergies, Chef Hoekstra has a decade of industry experience with a variety of upscale cuisine types and kitchen operations, including multi-unit, high-volume, private dining and cruise ships. Chef Hoekstra’s previous roles have been with Universal Orlando Resort, Wolfgang Puck Grand Café and Michael Jordan’s Steakhouse.
Before joining Bottleneck Management, Chef Hoekstra was selected to open and operate the first Michael Jordan’s Steakhouse on the West Coast. In the high-stakes environment of a restaurant opening, he prioritized his team, and as a result, retained most of the kitchen staff who worked during the opening. Chef Hoekstra guided his team in the principles of “steaksmanship” and brought the best of the Pacific Northwest’s bounty to every plate he created.
Prior to opening Michael Jordan’s Steakhouse, Chef Hoekstra worked his way up through chain and independent restaurants. He served as a sous chef at Wolfgang Puck Grand Café in Disney Springs before becoming executive chef at the age of 24. Chef Hoekstra has roots in Orlando, spending nearly every weekend with his mother, who worked at Walt Disney World, visiting unique restaurants on Disney property.
Chef Hoekstra has served in various other culinary positions during his 10-year career, including regional chef at Hash House a Go Go and Chef De Cuisine at Bread and Ink Café.
