Maduro is a Northern English-style brown ale with some American affectations. Maduro is higher in alcohol than the common English brown ale and features flaked oats in the malt bill which imparts a silky body and works to mesh the roasted, toasted and chocolate components together in Maduro’s complex malt profile. The end result is a remarkably full-flavored yet approachable and sessionable brown ale that pairs well with mild to medium cigars.

Rahr's Blonde Lager was the first beer to come out of Rahr & Sons Brewing Company. It is a medium-bodied traditional Munich Helles-style pale lager that features a rounded maltiness without being too heavy. And like every proud Texan, it has a good head, is pleasant - but not overly sweet.
The stronger and more flavorful cousin of the Mexican-style lager.
Bock has a tan, dense head with a crystal-clear amber color and a sweet aroma with a subtle roasted maltiness on the nose. The taste is slightly sweet with notes of roasted nuts and caramel. Lightly hopped, this dark lager goes down smooth.
Mermaids & Unicorns was inspired by East Texans requesting, "Brew me a great blonde". As with all our beers, we debuted a small batch of Mermaids & Unicorns at an OPEN TAPS event in fall 2014. The response was great and we then knew we had to move it into production. The name was inspired by all the fairytale worlds we experience as daddies of the 6 tiny girls in the True Vine Brewing Company family. The aroma of Mermaids & Unicorns is malty and bready and hints of peach and orange from the late addition of Cascade and Jarrylo hops. This smooth, clean finishing, mythical blonde is great for the Texas heat and cuisine. Added to the year around lineup in Feb 2015.
The allusion to pink elephants and the choice of names is not due to chance. With a particular character, the unique taste results from triple fermentation and the use of three different yeast strains. Sweet, biscuit malt backbone, supported by pleasant warmth and spice, finishes well rounded, floral, and dry.

Native to the Basque region of Spain, the game of Jai Alai involves players launching a ball from a curved mitt called a cesta in an attempt to outsmart and outmaneuver their opponents on a court called a fronton. Native to Tampa, Florida, Jai Alai IPA is a bold, citrusy and balanced India Pale Ale that involves six different hop varietals used generously in a 7.5% ABV beer. While the number of frontons in our home state of Florida has dropped since the sport’s peak in the mid-1980s, Cigar City Brewing pays homage to the sport and the dedicated players and patrons who keep this Florida tradition alive with its flagship ale. Bottlenectar is a light-bodied pale ale with a crisp balance of bitterness that showcases its unique Huell Melon hops. Huell Melon hops are relatively new on the scene, and a compelling choice for brewers. In making Bottlenectar, the hops are used twice—once in the kettle while brewing, and a second time for dry hopping. This lends Bottlenectar a sweet melon aroma and spectacular finish.

This is not your average IPA. From the incredible nose, to the amazing finish, this IPA is one that both session drinkers and beer nerds alike will love. We’re full on board the hopwagon with this big American-style IPA. However, it is not designed to blow your head off with overpowering hop bitterness. Instead, Mosaic IPA is an extremely well-balanced brew that showcases its unique hop aroma and flavor. This beer gets its name from a new hop variety named “Mosaic,” which is predominantly where the immense, raw hop aroma and flavor is derived. Mosaic IPA has a noticeable malt backbone to help soften the high level of hop bitterness and flavor, while keeping the body fairly light. The word "Mosaic" is also representative of the diverse range of individuals that make up our community. It's perfect in every way!
HAZY IPA Half-Life is always a crowd favorite for both craft beer aficionados and those new to the beer scene. But we did throw enough hops in here to bury a Brontosaurus. Inspired by some of our favorite West Coast IPAs the bold pine, citrus, peach, and tangerine hop flavors along with a clean bitterness are balanced by that velvety malt backbone. This beautiful blend of flavor and drinkability showcases the truly unique Eureka! hops, which we find to be wonderfully juicy and dank. If you want a brew that'll scratch your hop itch, you've come to the right place. A SMaSH, Single Malt and Single Hop, IPA using a caboodle (technical term for a large amount of malt) of malt and a new hop released in 2012 called Mosaic (HBC 369). It is a daughter of Simcoe (YCR 14), one of our favorite hops. Whole cone Mosaic is used for bittering, flavoring, and aroma in the kettle; it is also massively dry hopped. The beer is named after a Texas Heroine. Tasting notes: chalk-white head with a very clean malt backbone. The hops impart strong grapefruit, pineapple, and blueberry flavor and aroma. A strong beer that is extremely quaffable.
Karbach's Light Circus is a feel good machine churning out dreamy flavor from hoppy, to fruity, to tropical, and back again. This hazy IPA radiates positive vibes so you can chill out with the zonk-outs and remember that time you enjoy wasting is never time wasted.
Around the turn of the century, Michael Peticolas’ brother Charlie was a cop and COPS featured him in three episodes. Charlie proudly (yet painstakingly) screened each episode for his brothers, whose initial excitement slowly waned until the final segment of the last episode. As Charlie approached an unresponsive suspect, he repeatedly requests the suspect sit down until demanding “Sit Down or I’ll Sit You Down!”. This line struck Charlie’s brothers as hilarious and they immediately began jokingly repeating it…for years. A decade after becoming family legend, we used the line to name our Imperial IPA – a big beer that will sit you down if you don’t do it first. As for the beer itself, the intent is to exhibit the fresh and bright character of the hops. We dry hopped it with over a pound of hops per barrel of beer. It’s gold in color and the floral ester aroma is high. The hop bitterness is high, but not at all harsh. The hop flavor is intense, fresh and lively. Yet with all of our beers, it’s all about balance and this one is no exception. The ever present malt character provides a tremendously full mouthfeel. Finally, the alcohol in this beer is intentionally present (and delicious). We call it ‘Sit Down’ for short and it’s unquestionably our crew’s favorite.

Space Dust :: A Totally Nebular IPA. Great Western premium two-row, combined with c-15 and Dextri-Pils, give this beer a bright and galactic Milky Way hue. The hopping is pure starglow energy, with Chinook to bitter and late and dry additions of Citra and Amarillo. Space Dust is out of this world, with 62 IBU, and 8.2% ABV.
A tribute to our favorite Brewmaster, Greg Matthews, the Velvet Hammer appears as a dark, ruby reddish-brown ale beneath a sheath of protective off-white foam. It is malt-forward with elements of caramel and the sweetness of light brown sugar, balanced nicely by a combination of floral hops and a noticeable alcohol bite. It's a sturdy brew with a smooth character which belies both an inner strength and a slightly full body, along with a moderate bitterness to round out the taste.

Inspired by blues legend, Blind Lemon Jefferson, who began his career playing the Deep Ellum neighborhood in the 1920s. Blind Lemon hard seltzer makes use of cane sugar instead of the usual malted barley that's in a typical beer. When yeast is added, the result is a light, spritzy seltzer. We then dose it with natural lemon flavor to create a crushable beverage that pairs well with all things Texas.
This is a rosé - and a gose - by any other name. Goses are Red is a stylish match of a funky, crisp and tart gose with the soft sweetness of a rosé wine. The refreshing wheat-based beer begins with some of the qualities you’d expect from a gose, including coriander spicing and a light saltiness to complement the tartness imparted by our house cultures. But the story doesn’t end there - it builds in complexity, thanks to time spent in an oak foeder and the addition of grapes, which impart a refreshing rosé character and color. It’s a charming interpretation that says all the right things, but it’s not as sweet as you.
The Salty Lady is our interpretation of a Gose – a rather obscure, tart, salty German style beer. Our version is soured in the kettle with a lactic culture. The tartness is tempered by salt additions from around the world and finished with coriander for a citrus and earthy touch. We ferment with our house saison yeast to put our own little spin on the style. Its flavor is reminiscent of a sports drink at the end of a 110 degree day.
